Sticky Rice & Mango

It's mango season! This delightful sweet sticky rice and mango dessert with coconut milk is one of those desserts you always order when at a Thai restaurant. However, it's so easy to prepare and cook at home and as mangoes are everywhere right now, there is no reason not to try this lovely dessert.

Ingredients (4 serves)

1 cup glutinous (sticky) rice
1 cup coconut milk
2 tablespoons of sugar
1 pinch salt
1 tablespoon white sesame seeds
2 medium mangoes

Method

Rinse thoroughly and soak rice with enough water to cover for at least 1-2 hours.
Drain and place in sieve or steamer insert. Make sure rice does not touch the water
Cover with a towel and lid. Steam for 25 minutes until rice is tender and translucent.
Heat coconut milk on low heat, stirring until it starts to simmer. Mix in sugar and salt.
Place rice in a bowl and stir in 3/4 the coconut sauce and leave for 15 minutes until sauce is absorbed into the rice.Peel and slice mango into large pieces.
Toast sesame seeds.To serve, place a portion of sticky rice on a plate, with half a mango cheek, a drizzle of coconut sauce and sesame seeds.
