Taiwanese Glutinous Rice 油飯

Taiwanese Sticky Rice 油飯 is traditionally served as a celebration dish when there is a new born in the family or during dragon boat festival where sticky rice is wrapped in lotus leaves and steamed. Nowadays it is often served as comfort food available in many food stall in Taiwan. What is Taiwanese Sticky Rice? It is seasoned sticky rice tossed with bits of marinaded meat, mushrooms, dried squid and prawns. The Taiwanese people love to serve it with a drizzle of special sweet chilli sauce and sprinkle with coriander.I It is important to use long grained glutinous rice which keeps its shape better and prevents it from overcooked. Other ingredients

  •  3 tbs of soy sauce
  •  2 tbs of sesame oil
  • 1/4 cup of dried shrimp soaked in water for 10 min and drained
  • 1/4 cup of dried squid soaked in water for 10 min and drained. Cut it into thin pieces
  • 8 dried shitake mushroom soaked in water for 10 min and drained. Cut it into thin pieces
  • Thinly sliced ginger
  • Chopped coriander for garnish
  • 1/2 kg of pork fillet cut into thin slices. Marinade it with 2tbs of soy sauce and 1 tbs of sesame oil

Method

1. Prepare the glutinous rice and steam it in a
rice cooker. If you do not have a rice cooker follow
the instruction at stick rice mango.

Note: Make sure the rice is washed and soaked in 
cold water for at least 20 min before cooking/


2. Soak the Shitake mushroom in water and cut it in to thin slices
3. Prepare all other ingredients
 - 1/2kg or pork marinade with soy & sesame sauce
 - Soaked dried squid thinly slice
 - Soaked dried shrimp
 - Sliced ginger and coriander

4. In a hot wok (or frying pan)  cook the marinade pork fillet
5. Once the pork fillet is cooked remove it from wok
and place it into a bowl to rest.

6. In the same wok add 2tbs of sesame oil and fry the ginger until brown,
6. Add the shitake mushroom

7. Add dried squid and shrimp.
8. Add the glutinous rice9. Add the cooked pork and 3tbs of soy sauce. Mix all the ingredients evenly together.
